Note that electric cars have different pedal settings that affect the driving experience. You find the settings on the center display. In Polestar 2, you'll find them under the car icon.

One pedal drive (acceleration pedal)

One pedal drive is a driving mode where the accelerator pedal predominantly controls the car's speed. By removing the foot from the accelerator pedal, regenerative braking activates (instead of using the brake pedal). This is handy when driving in the city where traffic is heavier.

Creep mode (brake pedal)

Only available for Polestar 2

With creep mode activated, the car moves forward (in drive) or backward (in reverse) when removing the foot from the brake pedal. This is convenient when parking at slow speeds.
